Arguably, Italy's greatest culinary export after its plethora of homegrown World Class ingredients is its people. Italian chefs can be found working in, (Italian) restaurants all over the World bringing with them their own mercurial touches to the food they work with and whilst not always perfect they certainly bring passion and culture where ever they work.
A couple of years ago we faced a situation where we suddenly lost half (4) of our kitchen brigade at our Fox Valley (Sheffield) restaurant just two months before the busy Christmas period. After contacting 5 specialist chef agencies in London, Manchester and Leeds none were able to help so we decided to work the other way round.
We called our cousin Max in Italy and asked him if he could help. Max knew Leo. Leo is a chef maestro in 4 different catering schools in the Emilia-Romagna region. It wasn't long before we had our CVs being sent across and a month later candidates were coming over from Italy to fill the vacancies.
Since then we've sourced all our chefs for our London and Fox Valley restaurants from Italy and with the supply chain set up, we've also started supplying other restaurants and Hotels.
We have now set up a specialist division with Max, Leo and Loredanna specializing in recruiting chefs (from Pizzaiolos, CdeP, Sous, Head Chefs, waiting staff) directly from Italy.

We're not miracle workers but as we say in Italy, "Conosco i miei polli" (I know my chickens i.e. the basics!).
